Peanut Soup (sopa De Maní)
Peanut Soup, also known as Sopa de Maní, is a traditional dish from Bolivian cuisine. This hearty and creamy soup is made with peanuts and is a popular comfort food in Bolivia.
Ingredients
- 1 cup raw peanuts
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 potato, diced
- 4 cups vegetable broth
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrot and potato to the pot, and cook for a few minutes.
- Add the raw peanuts, vegetable broth, and cumin to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the peanuts are soft.
- Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
- Season the soup with salt and pepper to taste.
- Serve the peanut soup hot, garnished with chopped fresh cilantro.
