Peanut Soup (sopa De Maní)

Ingredients

  • 1 cup raw peanuts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 potato, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced carrot and potato to the pot, and cook for a few minutes.
  3. Add the raw peanuts, vegetable broth, and cumin to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the peanuts are soft.
  4. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
  5. Season the soup with salt and pepper to taste.
  6. Serve the peanut soup hot, garnished with chopped fresh cilantro.
