Peanut Sweet Flatbread (tasty Shenga Holige)

Ingredients

  • 1 cup roasted peanuts
  • 1 cup jaggery (or brown sugar)
  • 1 cup all-purpose flour
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon cardamom powder
  • Water, as needed
  • Ghee or oil, for cooking

Instructions

  1. In a food processor, grind the roasted peanuts and jaggery to a coarse mixture.
  2. Transfer the mixture to a bowl and add cardamom powder. Mix well and set aside.
  3. In a separate bowl, combine the all-purpose flour, turmeric powder, and a pinch of salt. Gradually add water to form a soft dough.
  4. Divide the dough into equal-sized balls and flatten them into small discs.
  5. Place a portion of the peanut-jaggery filling in the center of each disc and seal the edges to encase the filling.
  6. Roll out each filled disc into a thin flatbread, using a little flour to prevent sticking.
  7. Heat a skillet or griddle over medium heat and cook the flatbread with a little ghee or oil until golden brown on both sides.
  8. Repeat the process for the remaining dough and filling.
  9. Serve the Peanut Sweet Flatbread warm with a drizzle of ghee or a scoop of vanilla ice cream.
