Peas Pilaf (bhojpuri Matar Pulao)
Peas Pilaf, also known as Bhojpuri Matar Pulao, is a flavorful and aromatic rice dish from the Bhojpuri cuisine. This dish is a perfect combination of basmati rice, peas, and a blend of whole spices, creating a delicious and comforting meal.
Ingredients
- 2 cups basmati rice
- 1 cup green peas
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 4 green chilies, slit
- 4 cups water
- 1/4 cup vegetable oil
- 1 cinnamon stick
- 4 green cardamom pods
- 4 cloves
- 1 bay leaf
- Salt to taste
Instructions
- Wash the basmati rice under running water and soak for 30 minutes. Drain and set aside.
- Heat the vegetable oil in a large pan over medium heat. Add the cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for a minute until fragrant.
- Add the sliced onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.
- Add the green peas and sauté for 2-3 minutes.
- Now, add the soaked basmati rice and sauté for 3-4 minutes until the rice turns opaque.
- Pour in the water, add salt, and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork and remove from heat. Let it rest for 5 minutes before serving.
