Peas Pilaf (bhojpuri Matar Pulao)

Ingredients

  • 2 cups basmati rice
  • 1 cup green peas
  • 2 onions, thinly sliced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 4 green chilies, slit
  • 4 cups water
  • 1/4 cup vegetable oil
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 4 cloves
  • 1 bay leaf
  • Salt to taste

Instructions

  1. Wash the basmati rice under running water and soak for 30 minutes. Drain and set aside.
  2. Heat the vegetable oil in a large pan over medium heat. Add the cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for a minute until fragrant.
  3. Add the sliced onions, garlic, ginger, and green chilies. Sauté until the onions turn golden brown.
  4. Add the green peas and sauté for 2-3 minutes.
  5. Now, add the soaked basmati rice and sauté for 3-4 minutes until the rice turns opaque.
  6. Pour in the water, add salt, and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  7. Fluff the rice with a fork and remove from heat. Let it rest for 5 minutes before serving.
