Peas Stuffed Pastry (matar Kachori)

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup ghee (clarified butter)
  • 1 cup green peas, boiled and mashed
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger, grated
  • 1 teaspoon green chili, finely chopped
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for deep frying

Instructions

  1. In a mixing bowl, combine the all-purpose flour and ghee. Mix well and knead into a stiff dough using water. Cover the dough and let it rest for 15 minutes.
  2. In a separate bowl, mix together the mashed green peas, cumin seeds, ginger, green chili, coriander powder, red chili powder, garam masala, and salt to taste. Set aside.
  3. Divide the dough into small lemon-sized balls. Roll each ball into a small disc, about 3 inches in diameter.
  4. Place a spoonful of the pea filling in the center of each disc. Bring the edges together and pinch to seal, then gently flatten the ball with your hands.
  5. Heat oil in a deep frying pan over medium heat. Carefully slide in the stuffed dough balls and fry until golden brown and crispy.
  6. Remove the kachoris from the oil and drain on paper towels to remove excess oil.
  7. Serve the matar kachoris hot with chutney or sauce of your choice.
