Peb Hmoob (coconut Curry Chicken)
Peb Hmoob, also known as Coconut Curry Chicken, is a traditional Hmong dish that is rich in flavor and comforting. This dish is made with tender chicken cooked in a creamy coconut curry sauce, infused with aromatic herbs and spices.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 2 potatoes, peeled and cubed
- 1 red bell pepper, sliced
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili powder
- Salt and pepper to taste
- 2 tbsp cooking oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, and chili powder. Cook for 2-3 minutes to toast the spices.
- Pour in the coconut milk and add the diced tomatoes, cubed potatoes, and sliced red bell pepper. Season with salt and pepper.
- Bring the mixture to a simmer, then reduce the heat and let it simmer for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
- Once done, garnish with fresh cilantro and serve hot with steamed rice.
