Peb Hmoob, also known as Coconut Curry Chicken, is a traditional Hmong dish that is rich in flavor and comforting. This dish is made with tender chicken cooked in a creamy coconut curry sauce, infused with aromatic herbs and spices.

Peb Hmoob (coconut Curry Chicken)

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 2 potatoes, peeled and cubed
  • 1 red bell pepper, sliced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp cooking oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the curry powder, turmeric, cumin, coriander, and chili powder. Cook for 2-3 minutes to toast the spices.
  4. Pour in the coconut milk and add the diced tomatoes, cubed potatoes, and sliced red bell pepper. Season with salt and pepper.
  5. Bring the mixture to a simmer, then reduce the heat and let it simmer for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Once done, garnish with fresh cilantro and serve hot with steamed rice.
