Ingredients

  • 1 whole chicken, cut into pieces
  • 2 large potatoes, peeled and cubed

  • 3 cloves garlic, minced
  • 2 tablespoons Hmong curry paste
  • 1 can (14 oz) coconut milk
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Add the Hmong curry paste to the pot and cook for a few minutes to release the flavors.
  4. Add the chicken pieces to the pot and brown them on all sides.
