Ingredients
- 1 whole chicken, cut into pieces
- 2 large potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons Hmong curry paste
- 1 can (14 oz) coconut milk
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the Hmong curry paste to the pot and cook for a few minutes to release the flavors.
- Add the chicken pieces to the pot and brown them on all sides.
