Peking Duck
Peking duck is a classic Chinese dish known for its crispy skin and succulent meat. This recipe will guide you through the process of creating this iconic dish at home.
Ingredients
- 1 whole duck
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp Chinese five-spice powder
- 1 tsp sesame oil
- Salt and pepper to taste
- 8 scallions, cut into 2-inch pieces
- 16 small Chinese pancakes
Instructions
- Preheat the oven to 350°F (175°C).
- Clean the duck and pat it dry. Score the skin and season with salt and pepper.
- In a small bowl, mix the honey, soy sauce, hoisin sauce, rice vinegar, five-spice powder, and sesame oil.
- Brush the duck with the sauce mixture, inside and out.
- Place the duck on a rack in a roasting pan and roast for 2 hours, basting every 30 minutes with the remaining sauce.
- Remove the duck from the oven and let it rest for 10 minutes before carving.
- Serve the duck with the Chinese pancakes, scallions, and extra hoisin sauce.
