Peking Duck (pato A La Pekinesa)

Ingredients

  • 1 whole duck, about 5-6 pounds
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon Chinese five-spice powder
  • 1 teaspoon salt
  • 1 orange, quartered
  • 4 green onions, cut into 2-inch pieces
  • 8 thin pancakes, warmed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together the honey, soy sauce, hoisin sauce, five-spice powder, and salt.
  3. Rub the duck inside and out with the spice mixture. Stuff the orange quarters and green onions into the cavity of the duck.
  4. Place the duck on a rack in a roasting pan and roast for 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  5. Remove the duck from the oven and let it rest for 10 minutes before carving.
  6. Serve the duck with the warmed pancakes and additional hoisin sauce for dipping.
