Peking Duck (pato A La Pekinesa)
Peking Duck, also known as Pato a la Pekinesa, is a popular dish in Peruvian Chinese cuisine. This recipe combines the traditional flavors of Peking Duck with a Peruvian twist, creating a delicious and unique dish that is sure to impress your guests.
Ingredients
- 1 whole duck, about 5-6 pounds
- 1 tablespoon honey
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon Chinese five-spice powder
- 1 teaspoon salt
- 1 orange, quartered
- 4 green onions, cut into 2-inch pieces
- 8 thin pancakes, warmed
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix together the honey, soy sauce, hoisin sauce, five-spice powder, and salt.
- Rub the duck inside and out with the spice mixture. Stuff the orange quarters and green onions into the cavity of the duck.
- Place the duck on a rack in a roasting pan and roast for 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
- Remove the duck from the oven and let it rest for 10 minutes before carving.
- Serve the duck with the warmed pancakes and additional hoisin sauce for dipping.
