Ingredients
- 4 lamb shanks
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup red wine
- 2 cups beef broth
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Season the lamb shanks with salt and pepper.
- Heat some oil in a large pot over medium-high heat and brown the lamb shanks on all sides. Remove and set aside.
- Add the onions, garlic, carrots, and celery to the pot. Cook until softened.
- Pour in the red wine and scrape up any browned bits from the bottom of the pot.
- Return the lamb shanks to the pot and add the beef broth, bay leaves, thyme, and rosemary.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the lamb is tender.
- Remove the lamb shanks from the pot and keep warm. Skim off any excess fat from the cooking liquid.
- Simmer the cooking liquid until it thickens to your desired consistency.
- Serve the lamb shanks with the reduced cooking liquid and your choice of side dishes.
