Pembroke Pot Roast Lamb

Ingredients

  • 3 lbs boneless lamb shoulder
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup red wine
  • 2 cups beef broth
  • 2 sprigs of rosemary
  • Salt and pepper to taste

Instructions

  1. Season the lamb with salt and pepper.
  2. Heat some oil in a large pot and brown the lamb on all sides. Remove from the pot and set aside.
  3. Add the onions and garlic to the pot and cook until softened.
  4. Return the lamb to the pot and add the carrots, celery, red wine, beef broth, and rosemary.
  5. Cover and simmer for 2 hours, or until the lamb is tender.
  6. Remove the lamb from the pot and let it rest before slicing.
  7. Strain the cooking liquid and serve it with the sliced lamb.
