Pembrokeshire Pasty

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup cold water
  • 1 onion, diced
  • 2 potatoes, peeled and diced
  • 1 carrot, diced
  • 1/2 cup peas
  • 1/2 lb cooked beef, diced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour and butter. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs.
  2. Add the cold water and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a large bowl, mix together the onion, potatoes, carrot, peas, and cooked beef. Season with salt and pepper.
  5. Divide the dough into 4 equal portions. Roll out each portion on a floured surface to form a circle.
  6. Place a portion of the filling on one half of each dough circle. Fold the other half over the filling to form a semi-circle. Crimp the edges to seal the pasties.
  7. Place the pasties on a baking sheet and bake for 40 minutes, or until golden brown.
