Pembrokeshire Pork And Apple Sausage Rolls

Ingredients

  • 500g pork sausage meat
  • 2 apples, peeled, cored, and diced
  • 1 onion, finely chopped
  • 2 tsp fresh sage, chopped
  • Salt and pepper to taste
  • 500g puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a bowl, mix together the pork sausage meat, diced apples, chopped onion, sage, salt, and pepper until well combined.
  2. Roll out the puff pastry on a floured surface and cut into rectangles.
  3. Divide the sausage mixture into 12 portions and shape each portion into a log. Place a log of sausage mixture onto each pastry rectangle.
  4. Brush the edges of the pastry with beaten egg, then roll the pastry around the sausage mixture, pressing the edges to seal.
  5. Cut each roll into smaller pieces and place them on a baking sheet lined with parchment paper.
  6. Brush the tops of the sausage rolls with the remaining beaten egg.
  7. Bake in a preheated oven at 200°C (400°F) for 20-25 minutes or until the pastry is golden brown and the sausage is cooked through.
  8. Allow the sausage rolls to cool slightly before serving.
