Ingredients

  • 1 lb mixed seafood (such as shrimp, scallops, and white fish)
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 4 cups fish or seafood stock
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour

  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion to the pot and sauté until softened, then add the minced garlic and cook for another minute.
  3. Add the diced potatoes and seafood stock to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
  4. In a small bowl, whisk together the heavy cream and flour until smooth. Pour this mixture into the pot, stirring constantly to thicken the chowder.
  5. Add the mixed seafood to the pot and simmer for a few minutes until the seafood is cooked through.
  6. Season the chowder with salt and pepper to taste. Serve hot, garnished with the crispy bacon and chopped fresh parsley.
