Penang Assam Laksa Adventure

Ingredients

  • 200g rice vermicelli
  • 200g mackerel fish fillets
  • 1 stalk lemongrass, bruised
  • 4 kaffir lime leaves
  • 1 cup tamarind juice
  • 4 cups fish stock
  • 4 shallots, sliced
  • 4 red chilies, deseeded
  • 2 tbsp shrimp paste
  • 1 tbsp sugar
  • 1 cucumber, julienned
  • 1 onion, thinly sliced
  • 1 sprig mint leaves
  • 1 sprig laksa leaves (Vietnamese mint)
  • 1 sprig polygonum leaves (daun kesom)

Instructions

  1. Soak the rice vermicelli in hot water until softened, then drain and set aside.
  2. Poach the mackerel fish fillets in the fish stock until cooked, then remove and flake the fish.
  3. In a blender, combine shallots, red chilies, shrimp paste, and tamarind juice. Blend into a smooth paste.
  4. Heat a pot with some oil, then sauté the blended paste until fragrant.
  5. Add the fish stock, lemongrass, kaffir lime leaves, and sugar. Simmer for 20 minutes.
  6. Divide the softened rice vermicelli into serving bowls, then top with flaked mackerel fish, cucumber, and onion.
  7. Ladle the hot fish broth over the ingredients in each bowl.
  8. Garnish with mint leaves, laksa leaves, and polygonum leaves.
