Penang Assam Laksa Adventure
Embark on a culinary journey with this Penang Assam Laksa Adventure, a popular and flavorful noodle soup dish from Singaporean Chinese cuisine.
Ingredients
- 200g rice vermicelli
- 200g mackerel fish fillets
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves
- 1 cup tamarind juice
- 4 cups fish stock
- 4 shallots, sliced
- 4 red chilies, deseeded
- 2 tbsp shrimp paste
- 1 tbsp sugar
- 1 cucumber, julienned
- 1 onion, thinly sliced
- 1 sprig mint leaves
- 1 sprig laksa leaves (Vietnamese mint)
- 1 sprig polygonum leaves (daun kesom)
Instructions
- Soak the rice vermicelli in hot water until softened, then drain and set aside.
- Poach the mackerel fish fillets in the fish stock until cooked, then remove and flake the fish.
- In a blender, combine shallots, red chilies, shrimp paste, and tamarind juice. Blend into a smooth paste.
- Heat a pot with some oil, then sauté the blended paste until fragrant.
- Add the fish stock, lemongrass, kaffir lime leaves, and sugar. Simmer for 20 minutes.
- Divide the softened rice vermicelli into serving bowls, then top with flaked mackerel fish, cucumber, and onion.
- Ladle the hot fish broth over the ingredients in each bowl.
- Garnish with mint leaves, laksa leaves, and polygonum leaves.
