  • 4 large bell peppers

  • 1/4 cup bread crumbs
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the ground beef, cooked rice, onion, garlic, parsley, pecorino cheese, bread crumbs, egg, salt, and pepper. Mix until well combined.
  4. Stuff the bell peppers with the meat mixture and place them in a baking dish.
  5. Drizzle the stuffed peppers with olive oil and cover the dish with foil.
  6. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the peppers are tender and the filling is cooked through.
