Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1/2 cup Arborio rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup tomato sauce
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground beef, rice, onion, garlic, parsley, Parmesan cheese, tomato sauce, salt, and pepper.
  4. Stuff the bell peppers with the meat mixture and place them in a baking dish.
