Pepper Flatbread (coca De Pimientos)
This Pepper Flatbread, known as Coca de Pimientos, is a traditional dish from Valencian cuisine that features a flavorful combination of peppers and a crispy flatbread crust.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 packet active dry yeast
- 1/2 cup warm water
- 3 tablespoons olive oil
- 2 red bell peppers, thinly sliced
- 2 yellow bell peppers, thinly sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- In a bowl, combine the flour, salt, and sugar.
- In a separate bowl, dissolve the yeast in warm water and let it sit for 5 minutes.
- Add the yeast mixture and 2 tablespoons of olive oil to the flour mixture. Knead the dough until smooth, then cover and let it rise for 1 hour.
- Preheat the oven to 400°F (200°C).
- Roll out the dough into a large rectangle and transfer it to a baking sheet.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced peppers, onion, and garlic. Cook until softened, then stir in the smoked paprika, salt, and pepper.
- Spread the pepper mixture over the dough and bake for 20-25 minutes, or until the crust is golden and crispy.
- Slice the Pepper Flatbread and serve warm.
