Pepperpot Perfection
Pepperpot is a traditional Guyanese stew made with cassareep, a sauce made from cassava root, and a variety of meats. This dish is rich in flavor and perfect for a special occasion or holiday gathering.
Ingredients
- 2 lbs stewing beef, cut into chunks
- 1 lb pork, cut into chunks
- 1 lb lamb, cut into chunks
- 1 cup cassareep
- 4 cups water
- 2 cinnamon sticks
- 4 cloves
- 4 whole allspice berries
- 2 hot peppers, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- Salt to taste
Instructions
- In a large pot, combine the beef, pork, lamb, cassareep, and water. Bring to a boil, then reduce heat and simmer for 1 hour.
- Add the cinnamon sticks, cloves, allspice berries, hot peppers, onion, and garlic to the pot. Continue to simmer for 2 hours, stirring occasionally.
- Season with salt to taste and serve hot with rice or bread.
