Pepperpot Pork Stew With Sweet Potatoes

Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp allspice
  • 2 cups beef or vegetable broth
  • 2 large sweet potatoes, peeled and cubed
  • 1 scotch bonnet pepper, whole
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the pork chunks and brown on all sides, about 5 minutes.
  2. Add the chopped onion, minced garlic, thyme, and allspice to the pot. Cook for another 3-4 minutes until the onions are soft.
  3. Pour in the broth and add the cubed sweet potatoes and whole scotch bonnet pepper. Season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat to low and let it simmer, covered, for about 2 hours or until the pork is tender and the sweet potatoes are cooked through.
  5. Discard the scotch bonnet pepper before serving. Adjust seasoning if needed.
