Ingredients
- 2 lbs pork shoulder, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp allspice
- 2 cups beef or vegetable broth
- 2 large sweet potatoes, peeled and cubed
- 1 scotch bonnet pepper, whole
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium-high heat. Add the pork chunks and brown on all sides, about 5 minutes.
- Add the chopped onion, minced garlic, thyme, and allspice to the pot. Cook for another 3-4 minutes until the onions are soft.
- Pour in the broth and add the cubed sweet potatoes and whole scotch bonnet pepper. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and let it simmer, covered, for about 2 hours or until the pork is tender and the sweet potatoes are cooked through.
- Discard the scotch bonnet pepper before serving. Adjust seasoning if needed.
