Pepperpot Stew

Ingredients

  • 2 lbs stewing beef, cut into chunks
  • 1 cup cassava, peeled and diced
  • 1 cup sweet potatoes, peeled and diced
  • 1 cup okra, sliced
  • 1 cup spinach, chopped
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp vegetable oil
  • 4 cups beef broth
  • 2 tbsp brown sugar
  • 1 tsp ground allspice
  • 1 tsp thyme
  • 1 scotch bonnet pepper, whole
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the stewing beef and brown on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Pour in the beef broth and add the brown sugar, allspice, thyme, and whole scotch bonnet pepper. Stir to combine.
  4. Add the diced cassava and sweet potatoes to the pot. Cover and simmer for 1 hour, or until the meat is tender.
  5. Once the meat is tender, add the sliced okra and chopped spinach. Cook for an additional 10 minutes.
  6. Season with salt and pepper to taste. Discard the scotch bonnet pepper before serving.
