Pepperpot Stew
Pepperpot Stew is a traditional dish in Barbadian cuisine, known for its rich flavors and hearty ingredients. This stew is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 lbs stewing beef, cut into chunks
- 1 cup cassava, peeled and diced
- 1 cup sweet potatoes, peeled and diced
- 1 cup okra, sliced
- 1 cup spinach, chopped
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tbsp vegetable oil
- 4 cups beef broth
- 2 tbsp brown sugar
- 1 tsp ground allspice
- 1 tsp thyme
- 1 scotch bonnet pepper, whole
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the stewing beef and brown on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
- Pour in the beef broth and add the brown sugar, allspice, thyme, and whole scotch bonnet pepper. Stir to combine.
- Add the diced cassava and sweet potatoes to the pot. Cover and simmer for 1 hour, or until the meat is tender.
- Once the meat is tender, add the sliced okra and chopped spinach. Cook for an additional 10 minutes.
- Season with salt and pepper to taste. Discard the scotch bonnet pepper before serving.
