Ingredients

  • 4 large bell peppers
  • 1 cup uncooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced

  • 1 teaspoon paprika
  • 1 teaspoon dried mint
  • Salt and pepper to taste
  • 2 cups vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the uncooked rice, chopped onion, diced tomatoes, olive oil, paprika, dried mint, salt, and pepper.
  4. Stuff the bell peppers with the rice mixture and place them in a baking dish.
  5. Pour the vegetable broth into the baking dish around the peppers.
  6. Cover the dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the rice is cooked.
