Ingredients

  • 20 fresh mussels
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped parsley
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 lemon, cut into wedges

Instructions

  1. Scrub and debeard the mussels, then steam them until they open. Discard any mussels that do not open.
  2. Remove the top shell from each mussel and discard.
  3. In a bowl, combine breadcrumbs, Parmesan cheese, garlic, parsley, and black pepper.
  4. Spoon the breadcrumb mixture onto each mussel.
  5. Drizzle olive oil over the stuffed mussels.
  6. Broil the mussels for 5-7 minutes, or until the breadcrumbs are golden brown.
  7. Serve with lemon wedges.
