Convent-Style Partridge (Perdiz à Convento) is a traditional Portuguese dish that combines tender partridge with a rich and flavorful sauce. This dish is perfect for a special occasion or a hearty family meal.
Ingredients
- 4 partridges, cleaned and quartered
- 1/2 cup olive oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 bay leaf
- 1 cup dry white wine
- 1/2 cup chicken broth
- 1/4 cup white wine vinegar
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the partridge pieces and brown on all sides, then remove from the pot and set aside.
- In the same pot, sauté the onion, garlic, and bay leaf until the onion is soft and translucent.
- Pour in the white wine, chicken broth, and white wine vinegar. Bring to a simmer.
- Return the partridge pieces to the pot, season with salt and pepper, and cover. Simmer for 45-50 minutes, or until the partridge is tender.
