Ingredients

  • 4 partridges, cleaned and quartered
  • 1/2 cup olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 cup dry white wine
  • 1/2 cup chicken broth
  • 1/4 cup white wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the partridge pieces and brown on all sides, then remove from the pot and set aside.
  3. In the same pot, sauté the onion, garlic, and bay leaf until the onion is soft and translucent.
  4. Pour in the white wine, chicken broth, and white wine vinegar. Bring to a simmer.
  5. Return the partridge pieces to the pot, season with salt and pepper, and cover. Simmer for 45-50 minutes, or until the partridge is tender.
