Ingredients
- 2 lbs cassava, peeled and cut into chunks
- 2 eggs
- 3 shallots, finely chopped
- 2 green chilies, finely chopped
- 1/2 cup chopped cilantro
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- Salt to taste
- Oil for frying
Instructions
- Boil the cassava chunks until tender, then drain and mash them in a large bowl.
- Add the eggs, shallots, green chilies, cilantro, ground coriander, ground cumin, and salt to the mashed cassava. Mix well.
- Shape the mixture into small patties and set aside.
- Heat oil in a pan over medium heat.
- Fry the cassava patties until golden brown on both sides.
- Remove from the pan and place on a paper towel to drain excess oil.
- Serve the Perkedel Singkong Goreng hot with your favorite dipping sauce.
