Perkedel Singkong Goreng (fried Cassava Fritters)

Ingredients

  • 2 lbs cassava, peeled and cut into chunks
  • 2 eggs
  • 3 shallots, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 cup chopped cilantro
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • Salt to taste
  • Oil for frying

Instructions

  1. Boil the cassava chunks until tender, then drain and mash them in a large bowl.
  2. Add the eggs, shallots, green chilies, cilantro, ground coriander, ground cumin, and salt to the mashed cassava. Mix well.
  3. Shape the mixture into small patties and set aside.
  4. Heat oil in a pan over medium heat.
  5. Fry the cassava patties until golden brown on both sides.
  6. Remove from the pan and place on a paper towel to drain excess oil.
  7. Serve the Perkedel Singkong Goreng hot with your favorite dipping sauce.
