Persian Stuffed Grape Leaves (Dolmeh Barg-e-Mowz)

Ingredients

  • 1 cup rice
  • 1/2 cup yellow split peas
  • 1/2 cup chopped onions
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric
  • 1 jar grape leaves, drained and rinsed

Instructions

  1. Wash the rice and split peas, then soak them in water for 30 minutes.
  2. In a bowl, mix the soaked rice and split peas with onions, dill, parsley, mint, lemon juice, olive oil, salt, pepper, and turmeric.
  3. Place a grape leaf on a flat surface, shiny side down. Place a spoonful of the rice mixture in the center of the leaf.
  4. Fold the sides of the leaf over the filling, then roll it up tightly.
  5. Repeat with the remaining grape leaves and rice mixture.
  6. Place the stuffed grape leaves in a pot, seam side down, and add enough water to cover them.
  7. Cover the pot and cook over medium heat for 1 hour.
  8. Remove from heat and let it cool before serving.
