Ingredients
- 2 cups long-grain white rice
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the ground cumin, paprika, and turmeric, and cook for another minute to toast the spices.
