Peruvian Cookies (alfajores)
Alfajores are traditional Peruvian cookies made with two delicate, crumbly cookies sandwiched together with dulce de leche and dusted with powdered sugar. These sweet treats are perfect for any occasion and are sure to be a hit with family and friends.
Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup cornstarch
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 3 large egg yolks
- 1 teaspoon pure vanilla extract
- 1 cup dulce de leche
- Powdered sugar, for dusting
Instructions
- In a bowl, whisk together the flour, cornstarch, baking powder, and salt.
- In a separate bowl, cream the butter and sugar until light and fluffy. Add the egg yolks one at a time, then stir in the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, mixing until a dough forms.
- Roll out the dough on a floured surface to about 1/4 inch thickness. Use a cookie cutter to cut out rounds and place them on a baking sheet.
- Bake the cookies at 350°F for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool completely.
- Spread a layer of dulce de leche on the bottom side of half of the cookies, then sandwich them with the remaining cookies.
- Dust the alfajores with powdered sugar before serving.
