Peruvian Fried Rice (arroz Chaufa)

Peruvian Fried Rice (arroz Chaufa)

Ingredients

  • 3 cups cooked white rice
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup cooked chicken, diced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon ground cumin
  • 1 cup frozen peas and carrots, thawed
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  3. Push the onion and garlic to the side of the skillet, and pour the beaten eggs into the empty space.
  4. Scramble the eggs until they are cooked through, then mix them with the onion and garlic.
  5. Add the diced red bell pepper and cooked chicken to the skillet, and stir-fry for 2-3 minutes.
  6. Stir in the cooked white rice, soy sauce, oyster sauce, and ground cumin, and mix well.
  7. Add the thawed peas and carrots, and continue to stir-fry for another 2-3 minutes.
  8. Season with salt and pepper to taste, and drizzle with the remaining 1 tablespoon of vegetable oil.
  9. Cook for an additional 2-3 minutes, stirring constantly, until the rice is heated through and slightly crispy.
  10. Remove from heat and serve hot.
