Peruvian Milk Dessert (suspiro Limeño)

Ingredients

  • 1 can (14 oz) sweetened condensed milk
  • 4 egg yolks
  • 1 cup sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 4 egg whites
  • Ground cinnamon, for garnish

Instructions

  1. In a saucepan, combine the sweetened condensed milk and egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon. This will take about 20 minutes. Remove from heat and let it cool.
  2. In a separate saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and the mixture turns into a golden caramel. Pour the caramel into the bottom of individual serving dishes.
  3. Once the milk mixture has cooled, stir in the vanilla extract. Spoon the milk mixture over the caramel in the serving dishes.
  4. In a clean mixing bowl, beat the egg whites until stiff peaks form. Spoon the meringue over the milk mixture in the serving dishes.
  5. Sprinkle ground cinnamon over the meringue for garnish. Refrigerate for at least 2 hours before serving.
