Peruvian Milk Dessert (suspiro Limeño)
Peruvian Milk Dessert (Suspiro Limeño) is a traditional and decadent sweet treat from Peru. It consists of a creamy, caramel-like bottom layer topped with a fluffy meringue, creating a delightful contrast of textures and flavors.
Ingredients
- 1 can (14 oz) sweetened condensed milk
- 4 egg yolks
- 1 cup sugar
- 1/4 cup water
- 1 teaspoon vanilla extract
- 4 egg whites
- Ground cinnamon, for garnish
Instructions
- In a saucepan, combine the sweetened condensed milk and egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon. This will take about 20 minutes. Remove from heat and let it cool.
- In a separate saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and the mixture turns into a golden caramel. Pour the caramel into the bottom of individual serving dishes.
- Once the milk mixture has cooled, stir in the vanilla extract. Spoon the milk mixture over the caramel in the serving dishes.
- In a clean mixing bowl, beat the egg whites until stiff peaks form. Spoon the meringue over the milk mixture in the serving dishes.
- Sprinkle ground cinnamon over the meringue for garnish. Refrigerate for at least 2 hours before serving.
