Peruvian Mushroom Rice (arroz Con Champiñones)

Ingredients
- 2 cups long-grain white rice
- 4 cups vegetable broth
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup sliced mushrooms
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until the onion is soft and translucent.
- Add the diced red bell pepper and sliced mushrooms to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the ground cumin, paprika, salt, and pepper. Cook for an additional 2 minutes to toast the spices.
- Add the rice to the pot and stir to coat it with the vegetable and spice mixture.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and garnish with chopped green onions before serving.
