Peruvian Mushroom Rice (arroz Con Champiñones)

Ingredients

  • 2 cups long-grain white rice
  • 4 cups vegetable broth
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup sliced mushrooms
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until the onion is soft and translucent.
  2. Add the diced red bell pepper and sliced mushrooms to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the ground cumin, paprika, salt, and pepper. Cook for an additional 2 minutes to toast the spices.
  4. Add the rice to the pot and stir to coat it with the vegetable and spice mixture.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the rice with a fork and garnish with chopped green onions before serving.
