Peruvian Olluco Chowder (chupe De Olluco)
Peruvian Olluco Chowder, also known as Chupe de Olluco, is a traditional Peruvian-Chinese dish that combines the flavors of the Andes with the influence of Chinese immigrants in Peru. This hearty and comforting chowder is perfect for a cozy meal on a cold day.
Ingredients
- 1 pound olluco, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon aji amarillo paste
- 4 cups vegetable broth
- 1 cup frozen corn
- 1 cup evaporated milk
- 2 eggs
- 1/2 cup fresh cheese, cubed
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the aji amarillo paste and cook for another minute.
- Stir in the olluco and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the frozen corn and cook for an additional 5 minutes.
- In a bowl, whisk together the evaporated milk and eggs. Slowly pour this mixture into the chowder, stirring constantly.
- Add the fresh cheese and season with salt and pepper. Cook for a few more minutes until the cheese is melted and the chowder has thickened.
- Serve the Peruvian Olluco Chowder hot, garnished with aji amarillo slices if desired.
