Peruvian Purple Corn Drink (chicha Morada)

Ingredients

  • 6 ears of purple corn, husks and silks removed
  • 1 large pineapple, peeled and chopped
  • 3 cinnamon sticks
  • 4 cloves
  • 1 cup of sugar
  • 1 cup of freshly squeezed lime juice
  • 6 cups of water

Instructions

  1. In a large pot, combine the purple corn, pineapple, cinnamon sticks, and cloves.
  2. Add the water and bring to a boil over medium heat.
  3. Reduce the heat and simmer for 45 minutes.
  4. Remove from heat and let it cool to room temperature.
  5. Strain the liquid into a pitcher and discard the solids.
  6. Stir in the sugar and lime juice until the sugar is dissolved.
  7. Refrigerate until chilled, then serve over ice.
