Peruvian Purple Corn Drink (chicha Morada)
Chicha Morada is a traditional Peruvian drink made from purple corn, flavored with fruits and spices. It's a refreshing and vibrant beverage that is popular in Peruvian-Chinese cuisine.
Ingredients
- 6 ears of purple corn, husks and silks removed
- 1 large pineapple, peeled and chopped
- 3 cinnamon sticks
- 4 cloves
- 1 cup of sugar
- 1 cup of freshly squeezed lime juice
- 6 cups of water
Instructions
- In a large pot, combine the purple corn, pineapple, cinnamon sticks, and cloves.
- Add the water and bring to a boil over medium heat.
- Reduce the heat and simmer for 45 minutes.
- Remove from heat and let it cool to room temperature.
- Strain the liquid into a pitcher and discard the solids.
- Stir in the sugar and lime juice until the sugar is dissolved.
- Refrigerate until chilled, then serve over ice.
