Peruvian Rice
Peruvian rice is a delicious and flavorful dish that combines the vibrant flavors of Peruvian cuisine with the simplicity of rice. This recipe is easy to make and perfect for a weeknight dinner or a special occasion.
Ingredients
- 2 cups long-grain white rice
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 cup frozen peas
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced red bell pepper, ground cumin, and paprika. Cook for 2-3 minutes, until the bell pepper is slightly softened.
- Stir in the rice and cook for another 2-3 minutes, stirring frequently.
- Pour in the chicken or vegetable broth and add the frozen peas. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork before serving.
