Peruvian Rice

Ingredients

  • 2 cups long-grain white rice
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 cup frozen peas
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced red bell pepper, ground cumin, and paprika. Cook for 2-3 minutes, until the bell pepper is slightly softened.
  4. Stir in the rice and cook for another 2-3 minutes, stirring frequently.
  5. Pour in the chicken or vegetable broth and add the frozen peas. Season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork before serving.
