Ingredients
- 2 large potatoes, peeled and diced
- 1 pound shrimp, peeled and deveined
- 1/2 cup mayonnaise
- 1/4 cup lime juice
- 1 teaspoon aji amarillo paste (Peruvian yellow chili paste)
- 1 avocado, sliced
- 1/4 cup chopped cilantro

Instructions
- Boil the diced potatoes in salted water until tender. Drain and mash the potatoes with a fork or potato masher. Let the mashed potatoes cool.
- In a separate pot, poach the shrimp in boiling water for 2-3 minutes until they turn pink. Drain and chop the shrimp into small pieces.
- In a bowl, mix the chopped shrimp, mayonnaise, lime juice, aji amarillo paste, and chopped cilantro. Season with salt and pepper to taste.
- To assemble, place a layer of mashed potatoes in a serving dish. Top with a layer of the shrimp mixture, then another layer of mashed potatoes. Repeat the layers if desired.
- Garnish the top with sliced avocado and additional chopped cilantro. Serve on lettuce leaves.
