Ingredients

  • 2 large potatoes, peeled and diced

  • 1 avocado, sliced

Instructions

  1. Boil the diced potatoes in salted water until tender. Drain and mash the potatoes with a fork or potato masher. Let the mashed potatoes cool.
  2. In a separate pot, poach the shrimp in boiling water for 2-3 minutes until they turn pink. Drain and chop the shrimp into small pieces.
  3. In a bowl, mix the chopped shrimp, mayonnaise, lime juice, aji amarillo paste, and chopped cilantro. Season with salt and pepper to taste.
  4. To assemble, place a layer of mashed potatoes in a serving dish. Top with a layer of the shrimp mixture, then another layer of mashed potatoes. Repeat the layers if desired.
  5. Garnish the top with sliced avocado and additional chopped cilantro. Serve on lettuce leaves.
