Ingredients

  • 1.5 lbs beef stew meat, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons ají amarillo paste
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 2 large potatoes, peeled and cut into chunks
  • Salt and pepper to taste

Instructions

  1. Season the beef chunks with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium-high heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Stir in the ají amarillo paste, soy sauce, and tomato paste, cooking for a few minutes to combine the flavors.
  5. Return the beef to the pot and pour in the beef broth. Bring to a boil, then reduce the heat to low and simmer for 1.5 hours, or until the beef is tender.
  6. Add the potatoes to the pot and continue to simmer for an additional 30 minutes, or until the potatoes are cooked through.
  7. Adjust the seasoning with salt and pepper, if needed.
