Ingredients
- 1 whole duck, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 ají amarillo peppers, seeded and diced
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 cup chicken broth
- 1 cup beer
- 2 tablespoons soy sauce
- 2 tablespoons white vinegar
- Salt and pepper to taste
- 4 large potatoes, peeled and cut into chunks
- 1/4 cup chopped fresh cilantro
Instructions
- In a large pot, heat the vegetable oil over medium-high heat. Add the duck pieces and cook until browned on all sides. Remove the duck from the pot and set aside.
- Reduce the heat to medium and add the chopped onion, garlic, ají amarillo peppers, cumin, and paprika to the pot. Cook for 5 minutes, stirring occasionally.
- Return the duck pieces to the pot and add the chicken broth, beer, soy sauce, and white vinegar. Season with salt and pepper. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1 hour.
- Add the potatoes to the pot and continue to simmer, uncovered, for another 30 minutes or until the duck is tender and the potatoes are cooked through.
- Stir in the chopped cilantro and adjust the seasoning if necessary. Serve the spicy duck stew hot, accompanied by rice or crusty bread.
