Peruvian Spicy Duck Stew (ají De Pato)

Ingredients

  • 1 whole duck, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 ají amarillo peppers, seeded and diced
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 cup chicken broth
  • 1 cup beer
  • 2 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cut into chunks
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the duck pieces and cook until browned on all sides. Remove the duck from the pot and set aside.
  2. Reduce the heat to medium and add the chopped onion, garlic, ají amarillo peppers, cumin, and paprika to the pot. Cook for 5 minutes, stirring occasionally.
  3. Return the duck pieces to the pot and add the chicken broth, beer, soy sauce, and white vinegar. Season with salt and pepper. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1 hour.
  4. Add the potatoes to the pot and continue to simmer, uncovered, for another 30 minutes or until the duck is tender and the potatoes are cooked through.
  5. Stir in the chopped cilantro and adjust the seasoning if necessary. Serve the spicy duck stew hot, accompanied by rice or crusty bread.
