Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil

- 2 tablespoons ají amarillo paste (Peruvian yellow chili paste)
- 1 teaspoon ground cumin
- 1 cup fish or seafood broth
- 1 cup coconut milk
- 2 large potatoes, peeled and diced
- 1 cup frozen peas
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ají amarillo paste, and ground cumin. Cook for 2-3 minutes, stirring constantly.
- Add the shrimp to the pot and cook for 2-3 minutes until they start to turn pink.
