Peruvian Stuffed Potatoes (causa Rellena)

Ingredients
- 4 large yellow potatoes, boiled and mashed
- 1/4 cup lime juice
- 1/4 cup aji amarillo paste
- 1/2 cup mayonnaise
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded chicken or crab meat
- 1 avocado, sliced
- 4 hard-boiled eggs, sliced
- 1/2 cup pitted black olives
- 1/4 cup chopped fresh cilantro
Instructions
- In a bowl, mix the mashed potatoes with lime juice, aji amarillo paste, mayonnaise, cumin, salt, and black pepper. Divide the mixture into two equal parts.
- Spread half of the potato mixture on the bottom of a serving dish to form the first layer.
- Layer the shredded chicken or crab meat on top of the potato mixture.
- Place the sliced avocado and hard-boiled eggs on top of the meat layer.
- Spread the remaining potato mixture on top to form the final layer.
- Garnish with black olives and chopped cilantro.
- Cover and refrigerate for at least 1 hour before serving.
