Peruvian Stuffed Potatoes (causa Rellena)

Ingredients

  • 4 large yellow potatoes, boiled and mashed
  • 1/4 cup lime juice
  • 1/4 cup aji amarillo paste
  • 1/2 cup mayonnaise
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded chicken or crab meat
  • 1 avocado, sliced
  • 4 hard-boiled eggs, sliced
  • 1/2 cup pitted black olives
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a bowl, mix the mashed potatoes with lime juice, aji amarillo paste, mayonnaise, cumin, salt, and black pepper. Divide the mixture into two equal parts.
  2. Spread half of the potato mixture on the bottom of a serving dish to form the first layer.
  3. Layer the shredded chicken or crab meat on top of the potato mixture.
  4. Place the sliced avocado and hard-boiled eggs on top of the meat layer.
  5. Spread the remaining potato mixture on top to form the final layer.
  6. Garnish with black olives and chopped cilantro.
  7. Cover and refrigerate for at least 1 hour before serving.
