Peshawari Karahi (پشاوری کڑاہی)

Ingredients

  • 500g mutton, cut into pieces
  • 4 tomatoes, chopped
  • 2 onions, thinly sliced
  • 1/2 cup yogurt
  • 1/4 cup ghee
  • 2 green chilies, sliced
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat ghee in a karahi or deep skillet over medium heat.
  2. Add cumin seeds and let them crackle.
  3. Add sliced onions and sauté until golden brown.
  4. Add mutton pieces and cook until they turn brown.
  5. Stir in ginger and garlic paste, and cook for 2-3 minutes.
  6. Add tomatoes, yogurt, and all the spices. Cook until the tomatoes are soft and the oil separates.
  7. Add green chilies and cook for another 5 minutes.
  8. Garnish with fresh coriander leaves and serve hot.
