Ingredients
- 4 fillets of white fish (such as cod or haddock)
- 4 large potatoes, thinly sliced
- 1 onion, thinly sliced
- 2 tomatoes, sliced
- 4 cloves of garlic, minced
- 1 lemon, juiced
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Place the fish fillets in a baking dish and season with salt, pepper, and half of the minced garlic.
- Arrange the sliced potatoes, onions, and tomatoes around the fish.
- In a small bowl, mix the remaining garlic, lemon juice, and olive oil. Drizzle this mixture over the fish and vegetables.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and the potatoes are tender.
- Garnish with fresh parsley before serving.
