Ingredients

  • 1 whole turkey breast, deboned and butterflied
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the breadcrumbs, Parmesan cheese, pine nuts, parsley, garlic, and olive oil to make the stuffing.
  3. Lay the butterflied turkey breast flat and spread the stuffing evenly over the surface.
  4. Roll up the turkey breast and secure with kitchen twine.
  5. Season the outside of the turkey breast with salt and pepper.
  6. Place the stuffed turkey breast on a baking sheet and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. Let the turkey breast rest for 10 minutes before slicing and serving.
