Phad Thai, also known as Pad Thai, is a popular stir-fried noodle dish from Thailand. It is a perfect combination of sweet, sour, and salty flavors, with a hint of spiciness.

Phad Thai (pad Thai Noodles)

Ingredients

  • 8 oz rice noodles
  • 2 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 3 tbsp palm sugar
  • 2 tbsp vegetable oil
  • 1/2 cup firm tofu, cubed
  • 1/2 cup dried shrimp
  • 4 cloves garlic, minced
  • 2 eggs
  • 1 cup bean sprouts
  • 1/4 cup crushed peanuts
  • 2 green onions, chopped
  • 1 lime, cut into wedges

Instructions

  1. Soak the rice noodles in warm water for 8-10 minutes until they are soft but still firm. Drain and set aside.
  2. In a small bowl, mix the tamarind paste, fish sauce, and palm sugar. Set aside.
  3. Heat the vegetable oil in a wok or large skillet over medium-high heat. Add the tofu and dried shrimp, and stir-fry for 2-3 minutes.
  4. Add the minced garlic and stir-fry for another 1-2 minutes.
  5. Push the ingredients to one side of the wok and crack the eggs into the empty space. Scramble the eggs until they are cooked, then mix them with the other ingredients.
  6. Add the soaked rice noodles to the wok, followed by the tamarind-fish sauce mixture. Stir-fry for 2-3 minutes until the noodles are well-coated with the sauce.
  7. Add the bean sprouts and half of the crushed peanuts, and stir-fry for another 1-2 minutes.
  8. Transfer the phad Thai to serving plates and garnish with the remaining crushed peanuts, chopped green onions, and lime wedges.
