Ingredients
- 1 large eggplant, sliced
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, garlic, and brown sugar to make the marinade.
- Place the sliced vegetables in a large bowl and pour the marinade over them. Toss to coat the vegetables evenly. Let them marinate for 10-15 minutes.
