Phaksha Kheer, also known as Bhutanese Red Rice Pudding, is a traditional dessert from Sikkimese Cuisine. This creamy and aromatic pudding is made with red rice, milk, sugar, and flavored with cardamom and nuts.

Ingredients

  • 1 cup Bhutanese red rice
  • 4 cups milk
  • 1/2 cup sugar
  • 4-5 cardamom pods, crushed
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)

Instructions

  1. Rinse the red rice under cold water and soak for 30 minutes.
  2. In a heavy-bottomed pan, bring the milk to a boil.
  3. Drain the soaked rice and add it to the boiling milk. Simmer on low heat, stirring occasionally, until the rice is cooked and the mixture thickens, about 30-40 minutes.
  4. Add sugar and crushed cardamom pods, and continue to cook for another 5-10 minutes.
  5. Remove from heat and let it cool to room temperature.
  6. Garnish with chopped nuts before serving.
