Phaksha Ko Dhal (bhutanese Style Spiced Lentil Curry)

Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tomato, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are soft.
  2. In a separate pan, heat the vegetable oil and add the cumin seeds. Once they start to sizzle, add the chopped onion and sauté until golden brown.
  3. Add the minced garlic, grated ginger, and chopped tomato. Cook until the tomatoes are soft and the mixture is well combined.
  4. Stir in the turmeric, coriander powder, red chili powder, and salt. Cook for a few minutes to let the spices release their flavors.
  5. Add the cooked lentils to the spice mixture and stir well. Simmer for another 5-10 minutes, adding water if needed to reach your desired consistency.
  6. Garnish with fresh cilantro and serve hot with steamed rice or flatbread.
