Ingredients

  • 2 cups basmati rice
  • 1 cup grated local cheese
  • 1 onion, finely chopped
  • 3-4 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin seeds
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Water

Instructions

  1. Wash the rice thoroughly and soak it in water for 30 minutes.
  2. Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onion and minced garlic to the pot. Sauté until the onion turns golden brown.
  4. Drain the soaked rice and add it to the pot. Stir in the turmeric and salt.
  5. Pour in enough water to cover the rice by about an inch. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  6. Gently fold in the grated cheese, allowing it to melt into the rice.
  7. Once the cheese is melted and well combined, remove the pot from the heat.
  8. Phaksha Maru is now ready to be served hot.
