Phaksha Phat Ko Masu (bhutanese Style Spiced Pork Ribs)

Ingredients

  • 1 kg pork ribs
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 2 green chilies, sliced
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a large pot or deep pan over medium heat.
  2. Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
  3. Add the pork ribs to the pot and cook until they are browned on all sides.
  4. Stir in the chopped tomatoes, green chilies, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well to coat the ribs with the spices.
  5. Pour in enough water to cover the ribs and bring to a boil. Reduce the heat, cover the pot, and simmer for 1 hour or until the pork is tender.
  6. Garnish with fresh coriander leaves before serving.
