Phaksha Sando (bhutanese Red Rice Salad)

Ingredients

  • 2 cups Bhutanese red rice
  • 1 cup shredded cabbage
  • 1 cup diced carrots
  • 1 cup chopped spinach
  • 1/2 cup sliced bell peppers
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1/4 cup roasted peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the red rice thoroughly and cook according to package instructions. Let it cool.
  2. In a large bowl, combine the cooked red rice, shredded cabbage, diced carrots, chopped spinach, sliced bell peppers, cilantro, and mint leaves.
  3. In a small pan, dry roast the peanuts and sesame seeds until fragrant, then add them to the bowl.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
  5. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
