Ingredients
- 2 cups Bhutanese red rice
- 1 cup shredded cabbage
- 1 cup diced carrots
- 1 cup chopped spinach
- 1/2 cup sliced bell peppers
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup roasted peanuts
- 1/4 cup sesame seeds
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the red rice thoroughly and cook according to package instructions. Let it cool.
- In a large bowl, combine the cooked red rice, shredded cabbage, diced carrots, chopped spinach, sliced bell peppers, cilantro, and mint leaves.
- In a small pan, dry roast the peanuts and sesame seeds until fragrant, then add them to the bowl.
- In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
