Phaksha Sando Masu (bhutanese Style Spicy Mushroom Curry)

Ingredients

  • 500g mushrooms, sliced
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 4-5 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 green chilies, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add minced garlic, grated ginger, and green chilies. Sauté for a few minutes.
  3. Now, add the pureed tomatoes and cook until the oil separates from the masala.
  4. Stir in the coriander powder, turmeric powder, red chili powder, and salt. Cook for a couple of minutes.
  5. Add the sliced mushrooms and mix well with the masala. Cover and cook for 10-15 minutes.
  6. Sprinkle garam masala and garnish with fresh coriander leaves before serving.
