Phane Fritters

Ingredients

  • 1 cup dried mopane worms
  • 1 cup all-purpose flour
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 eggs
  • 1 teaspoon ground paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying

Instructions

  1. Soak the dried mopane worms in water for 10 minutes, then drain and pat dry.
  2. In a bowl, mix the mopane worms, flour, onion, tomatoes, eggs, paprika, coriander, salt, and black pepper until well combined.
  3. Heat oil in a pan over medium heat.
  4. Scoop spoonfuls of the mixture into the hot oil and fry until golden brown, about 3-4 minutes per side.
  5. Remove the fritters from the oil and place them on a paper towel to drain excess oil.
  6. Serve the phane fritters hot with a dipping sauce or chutney.
