Phane Fritters

Ingredients
- 1 cup dried mopane worms
- 1 cup all-purpose flour
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 eggs
- 1 teaspoon ground paprika
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
Instructions
- Soak the dried mopane worms in water for 10 minutes, then drain and pat dry.
- In a bowl, mix the mopane worms, flour, onion, tomatoes, eggs, paprika, coriander, salt, and black pepper until well combined.
- Heat oil in a pan over medium heat.
- Scoop spoonfuls of the mixture into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel to drain excess oil.
- Serve the phane fritters hot with a dipping sauce or chutney.
